We had the first meeting of the Kokua Book Club last Friday. We had a really nice discussion on Mark Bittman's book Food Matters. It is a personal look at how to change to a diet that is flexible, healthy, yet promotes the reduction of greenhouse gases and improves food sustainability. It looked at some modern historical developments and decisions that influenced the creation of things like the food pyramid which may have had as many negative consequences as positive. The book made us think about the negative aspects of processed and refined "health food". It also provides some practical ways to make your kitchen more friendly to a healthy, sustainable, and thoughtful diet and even gave some great recipes.
